The Ruby

I love a good Reuben sandwich.  I just do.  Something about the kraut I guess.  Mmmm, that and the corned beef on rye - delicious, or as my good friend Dora would say, deliciouso.  Actually I have no idea if Dora says that.  We'll just pretend she does. 

We don't sell a Reuben sandwich at the Little Brick House.  I know, it is pretty much a crime.  We can get close with a Pastrami sandwich decorated up just like a Reuben.  We've had a number of people request them that way.  I was in a shopping center where a sandwich chain competitor of ours is located and they were bragging about having the best grilled Reuben sandwich.  The best according to who is my question.  It set me on a new mission - make the best grilled Reuben - period.

Well, I am not going to bring in corned beef.  I am just not.  Pastrami in my opinion is a close enough match and will do just fine.  I also quite like Pastrami so we are going with it.  I also like to add a little something just as a bit of a twist so I put on a bit of salami.  Where is this sandwich going?  Usually a Reuben has Swiss cheese and mine does but it also has a slice of Havarti.  I have decided that this is Pirates cheese and when you pronounce Havarti you have to stress the ar part and could even roll that R just a bit.  You also have to pretty much say it every time you touch the package of cheese.  It's pretty much an unspoken rule but I thought you should know.

Okay, quick review so far - pastrami, salami, Swiss and Havarrrrrti.  Obviously we need kraut - don't under-do the kraut, it's gotta be there.  Thousand Island dressing and Marble Rye bread.  We heat, we construct, we grill to perfection.  I like this sandwich.  I made one last night and it became apparent that everyone else liked it too as it disparate pretty quickly and I only got a small amount.  Tonight I made two of them and managed to get a half sandwich.  Pops and ma had some as did Dave and myself.  Amy caught a little taste of dads.  Anyhow, everyone agrees that we need to add this to the menu. 

Because it is not a true Reuben I will not call it such.  I am thinking of calling it "The Ruby".  I may add a little line like 'a Reuben with a Brick House spin'.  Not 100% on that yet but I like "The Ruby".  It is kind of a Corner Gas tribute.  Anyhow, good sandwich.  Look for it coming to The Little Brick House nearest you.  Oh, that would be The Little Brick House right here in Cedar City.  Hope you're close.

Well, looks like we've gotta get The Brick rolled out and then put the final touches on The Ruby.
